APPLESAUCE MUFFINS A: A AB: A B: OK O: OK

  • 2 cups Rice Flour
  • A: HB AB: HB B: HB O: N
  • 1/2 tsp Salt
  • A: N AB: N B: N O: N
  • 1 tsp Baking Soda
  • A: UAB: UB: UO: U
  • 1/2 tsp Cinnamon (opt)
  • A: N AB: N B: A O: A
  • 1/2 tsp Ginger
  • A: HB AB: N B: HB O: N
  • 1/2 cup Butter
  • A: A AB: A B: N O: N
  • 1 Egg (Chicken)
  • A: N AB: N B: HB O: N
  • 1 cup Apple sauce, unsweetened organic
  • A: N AB: N B: N O: N
  • 1 cup Sugar (Brown)
  • A: N AB: N B: N O: N

    Sift all dry ingredients together and place in to a bowl to the side. In a medium bowl, cream the butter and brown sugar together until likght in texture. Add the egg and mix until thoroughly blended.

    With the mixer on low, add the dry ingredients until just blended. Add the applesauce and continue to blend until the mixture is smooth and thoroughly mixed together.

    Line a mufin tin with paper muffin cups and distribute the batter evenly. Balke in a preheated oven at 400 degrees F for 15-18 mins. Let cool, remove from tin and dust w/ confextioner's sugar if desired.
