  • 1 cup Buckwheat groats, ground

  • 1 cup Spelt Flour/Products
  • A: N AB: N B: N O: N
  • or any other flour (opt)
  • A: U AB: U B: U O: U
  • 2 tsp Baking powder (home-made, corn free)
  • A: U AB: U B: U O: U
  • 1 tsp Baking Soda
  • A: U AB: U B: U O: U
  • 1 tsp Salt
  • A: N AB: N B: N O: N
  • 2 Egg (Chicken)
  • A: N AB: N B: HB O: N
  • 2 cups Soy Milk
  • A: HB AB: N B: N O: N
  • 1 tsp Lemon Juice
  • A: HB AB: HB B: N O: N
  • 2 Tbsp Canola Oil
  • A: N AB: N B: A O: N
  • 2 Tbsp Molasses
  • A: U AB: N B: N O: N

    Sift together the dry - mix together the wet - mix both of these together just until mixed. Don't try to get out all lumps. Makes about a dozen good sized cakes.
