  • 4 cups Fruit sliced

  • 1/3 cup Sugar (White)

  • 1 Tbsp Tapioca quick cooking

  • 1 Tbsp Lemon Juice

  • 1 tsp Vanilla (opt)

  • Topping:
  • 1/2 cup Bean flour (any neutral bean)

  • 1/4 cup Rice Flour brown
  • A: HB AB: HB B: HB O: N
  • 1/4 cup Tapioca flour
  • A: N AB: A B: A O: N
  • 1/4 cup Xanthan Gum
  • A: U AB: U B: A O: U
  • 1/2 tsp baking soda
  • A: U AB: U B: U O: U
  • 1/2 tsp Baking Powder
  • A: N AB: N B: N O: N
  • 1/2 cup Yogurt non-fat
  • A: N AB: HB B: HB O: N
  • 1 Tbsp Lemon Juice
  • A: HB AB: HB B: N O: N
  • 2 Tbsp Olive Oil (opt)
  • A: HB AB: HB B: HB O: HB
  • 1 tsp Vanilla (opt)
  • A: N AB: N B: N O: A
  • 1 Tbsp Honey
  • A: N AB: N B: N O: N
  • OR Maple Syrup (opt)
  • A: N AB: N B: N O: N

    Preheat oven to 400 degrees F. use 8X8 inch pan or casserole dish - spray with oil

    Combine fruit filling ingredients and let stand while you mix the cobbler topping.

    Topping: In bowl, mix the dry ingredients. In another bowl, mix together wet ingredients and add to dry ingredients, mix until just combined.

    Put fruit filling in prepared pan and drop the topping by spoonfuls onto the fruit. Bake for 20-25 minutes.
