  • 12 oz. Pkg. Of Tofu silken, extra firm
  • A: HB AB: HB B: A O: N
  • 4 tsp Lemon Juice
  • A: HB AB: HB B: N O: N
  • 1 Tbsp Canola Oil (opt)
  • A: N AB: N B: A O: N
  • or Olive Oil
  • A: HB AB: HB B: HB O: HB
  • 1 Tbsp Vinegar (Rice) (opt)
  • A: U AB: U B: U O: U
  • to taste Salt
  • A: N AB: N B: N O: N

    Put tofu in food processor with the lemon, and vinegar. Puree - drizzle in the oil a little at a time. Can add other spices if you like - cayenne is good or basil, etc.

    I think someone said on here that rice vinegar was OK - if not, you can use more lemon.

    I enjoy this and it's pretty darn close to tasting like dairy.
