SWEET POTATO SOUP A: A AB: A B: OK O: OK

  • 2 Leek wash and slice thinly
  • A: HB AB: N B: N O: HB
  • 1 clove Garlic minced
  • A: HB AB: HB B: N O: HB
  • 3 Tbsps Butter
  • A: A AB: A B: N O: N
  • 3 cups Broth (any neutral)
  • A: N AB: N B: N O: N
  • 1 cup Wine (White)
  • A: N AB: N B: N O: N
  • 2 Potato (Sweet) peeled and chopped
  • A: A AB: HB B: HB O: HB
  • 1 whole Lemon juiced
  • A: HB AB: HB B: N O: N
  • or Lime juiced
  • A: N AB: N B: N O: N
  • To taste Pepper (Cayenne)
  • A: A AB: A B: HB O: HB
  • To taste Salt
  • A: N AB: N B: N O: N
  • Parsley
  • A: N AB: HB B: HB O: HB

    Melt butter in big pot over medium heat. Add the leeks and garlic. Sauté until soft. Add broth or water plus the wine. Add sweet potatoes to pot. Raise heat until it boils. Turn down to simmer.

    Simmer 15 minutes. Add the juice of an entire lemon or lime. Season with cayenne and salt.

    Puree the whole thing, a bit at a time, in the blender. Put back in pot. Heat up but don't boil.

    Garnish bowls of soup with parsley.

    Yumm. Another opinion: Anyone else who's making this sweet potato soup, skip the lime juice. We didn't like it in there.
