  • Zucchini
  • A: N AB: N B: N O: N
  • Olive Oil (opt)

    All you do is take a zucchini after you wash it and then use a vegetable peeler to make along thin strips. She suggests sauteeing in olive oil for a couple of minutes but I think you could probably blanch them in boiling water really quick too.

    Then just top with your favorite sauce.

    I had this tonight instead while the 'fam' ate spaghetti and it was awesome! Of course, I had extra meatballs!
